Brewing Process
Step One:
Open the Chemex-Bonded® Coffee Filter into a cone. One side should have three layers. Place the cone in the top of your coffeemaker with the 3 layer portion toward the pouring spout. Pre-rinse the filter with hot water and discard the rinse water.

Step Two:
Coarsely grind 42 grams of coffee ( ~ 6 Tablespoons) coarse like kosher salt for use in a 5 cup Chemex brewer. (we sell the 8 cup/64 oz, need to adjust quantities)  and add to filter.  

Step Three:
Heat water to 200-205 degrees.  Pour a small amount of water over the coffee grounds, just enough to wet them. This is important because it allows the grounds to “bloom”.  The fresher the coffee the more bloom you will have. Give it a quick stir to saturate all the grounds.

Step Four:
from stumptown BARISTA TIP: If you’re using a scale and timer, start the 4 minute timer and fill to 150 grams of water for the first pour. At 3:20 minutes, fill to 450 grams of water. At 2 minutes, fill to 700 grams. Pull filter when the coffee reaches the glass button (20 oz) which should be at about 4 minutes.

After this first wetting simply pour more water in a spiral soaking the grounds each time, but keeping the water level well below the top of the coffeemaker.  Once the desired amount of coffee is brewed, dispose of the spent grounds by lifting the filter out of the coffeemaker. And that’s it! You are now ready to enjoy a perfect cup of coffee!

The quantity of brewed coffee can be measured in the Chemex Coffee Maker by using the button and handle bottom as guides. Measurements are based on a standard 5 ounce cup. The button marks the halfway point, and the bottom of the handle indicates full capacity.


How to make a double espresso or 10 oz mug of coffee.

Before using your Aeropress remove the plunger and the cap from the chamber. Insert a filter into the cap, rinse the filter, and then twist it onto the chamber.

Measure and grind  (34 grams) of coffee to fine

Stand the Aeropress on a sturdy mug and put two AeroPress scoops or (34 grams) of fine ground  coffee into the the chamber.

Pour hot water 185-205 degrees (185 aeropress recommends, 205 stumptown) slowly into the chamber up to the number 2 or (x grams of water).  Mix the water and coffee for ~ 10 seconds. Wet the rubber seal on the plunger and gently press down about a 1/4″ and maintain that pressure while pushing down. It should take about 20-30 seconds for the coffee to extract.  You have just made a double espresso. To make a cup of coffee top the mug off with hot water. For a latte top with hot milk.   We recommend a 50/50 ratio of coffee to water for a cup of coffee. 

To clean: remove the cap and push the plunger to eject the “puck” of grounds. Rinse away any grounds on the rubber seal and clean up is done.

Bonavita 8 cup brewer.



Bonavita V Style Dripper

Add a #4 filter to Bonavita Dripper and rinse with boiling water, drain off excess water.

Weigh and grind 24 grams  or 3 1/2 Tablespoons of coffee and grind to a medium-coarse grind.  Add ground coffee to Bonavita dripper.

Start timer then add 100 grams [3 oz]  of 200° water.  Stir to saturate coffee grounds.

Add 250 grams more water for a total of 350 grams [12 oz]. Stir again.

Cover and allow to steep for total of 2 1/2 minutes then place on top of your favorite 12 oz coffee cup and open the valve to release the coffee.
